Thai Pumpkin Soup 800 4573PEANUT BUTTER PUMPKIN SOUP

Prep Time: Under 30 min
Cook Time: Under 45 min
Serves: 2 people

Ingredients
• 1 cup Pumpkin or Butternut Squash puree or both (Recipe follows)
• 1 Medium Yam or Sweet Potato
• 1/4 cup smooth peanut butter
• 1 tbsp butter
• about 1-2 cups vegetable stock or water  – For a creamy soup you can substitute ½ of the stock with cream
• salt and freshly ground pepper to taste
• 1 tsp Curry powder
• 1 tsp chopped Ginger
• Chives for garnish

Method

1.  Chop the sweet potatoes roughly and steam them until soft.
2.  Blend into smooth puree.
3.  Melt Butter under low heat in sauce pot and sauté the ginger.
4.  Stir in the pureed pumpkin, sweet potatoes and peanut butter.
5.  Add the stock, water & seasoning and stir till well blended.
6.  Cook on low heat for an additional 10 minutes.
7.  You can garnish with chopped chives and sour cream

Easy Pumpkin Puree

1. Select 1 or 2 pumpkins depending on their size and how much puree you would like to make.
2. Cut the pumpkins in half and remove seeds and membranes.
3. Cut the pumpkin halves into quarters
Place these upside down on a sheet pan & bake in a preheated 400F oven for about 30 minutes

Note:
• Butternut squash will take about 45 minuets to 1 hour. Push the skin to check for doneness.  It should be semi-soft
• The outer skin will turn deep orange color.  Let the pieces cool enough so you can handle them.
• Tear the skin off of the flesh – it will come off very easily if the pieces are baked properly.
• Put the flesh into a food processor if you would like a smooth consistency.

Note:
• You may have to add a small amount of water if it is too thick

Apple-Crisp-Recipe-15CHEF DAN’S APPLE CRISP

Filling Ingredients

• 4 each apples – (Granny Smith, Pink Lady or Fuji)
• 1 TBS Cinnamon
• 1 cup Brown sugar
• ¼ Cup Flour
• 1 tsp Fresh Lemon juice
• 1 TBS Fresh Orange juice
• 1 TBS fine grated Lemon zest
• 1 TBS fine grated Orange Zest
• Pinch of Salt
• Pinch of Nutmeg

Method

1. Preheat oven to 350 F – Wash apples, remove the cores, slice into thin wedges and then cut the wedges in half so they are in the shape of a triangle. Place apples in a large mixing bowl and add the above ingredients and toss.
2. Butter a (13” x 9” x 2”)  Pyrex style baking dish.  Place the above mixture evenly in the dish, (alternatively you can prepare individual ramekins in the same way and fill them.)
3. Mix the dry ingredients below in a medium mixing bowl by hand till incorporated evenly.

Add the softened butter and work with your hands for about 2 minutes until it is evenly mixed and it resembles crumbs.

Topping Ingredients

• 1 ½ cups flour
• 1 cup granulated sugar
• 1 cup oatmeal
• ½ cup brown sugar
• 1 tsp cinnamon
• 2 sticks soft butter
• Pinch of salt

Sprinkle the topping ingredients over the apples mixture evenly and place in the center of the oven at 350 F.  Bake for about 1 hour.  Set your kitchen timer.

When you see it bubbling around the edges and the topping is golden brown it is done.

Topping Ingredients

• 1 each Medium Onion (Red onion is preferred)
• 20 each Garlic Cloves
• 2 Tbs. Olive Oil
• ½ tsp Salt
• ¼ cup Balsamic Vinegar
• 2 tbs Sugar

Method

1. Clean Onion by removing skin and base core.  Cut in half and cut ½ inch slices out of each half.
2. Peel garlic cloves and cut in half lengthwise.
3. Place onions and garlic in a small sauce pot with the oil and salt.
4. Simmer covered for about 20 to 30 minutes until carmelization occurs & stir will simmering.
5. After the mixture starts to caramelize add the vinegar and sugar.
6. Stir well and continue to simmer for an additional 30 minutes until mixture thickens.
7. Cool mixture in fridge.  Will keep for up to a week sealed in the refrigerator.
Base Ingredients

• 1 each French Baguette Loaf of bread
• ½ cup Olive Oil
• 1 cup goat cheese

Method

1. Cut bread 1/2” thick slices on a diagonal.
2. Heat sauté Pan on medium heat.
3. Place enough oil in the bottom of the pan to coat the pan
4. Place sliced bread and lightly brown in oil and turn over when brown – cook till golden brown or desired doneness
5. Spread a small amount of goat cheese on each slice and top with a tbs full of the onion garlic mixture
6. You can top with fresh micro greens or chopped chives or even fresh grated asiago cheese
